Tuna, Red Beans & Wedges

Method:

Preheat oven to 180°C.

Toss potatoes in a little oil and seasonings and cook in oven until tender.

At the same time, heat a little oil in a large pot and gently sauté onion and garlic.

Add tomatoes, 1/2 cup stock and sambal. Stir well and cook for

5-10 mins until thick and fragrant, adding more stock if needed.

Then add beans, tuna and a little more stock, and gently cook to heat. Turn heat off and fold in potato wedges.

Spoon into bowls and, if you like, top with grated cheese and sour cream.
