Preheat oven to 180°C.
Cream 200 gm butter and the caster sugar until light and fluffy.
Add the flour and lemon zest. Mix with a wooden spoon and then add the eggs, one at a time, stirring well between each addition. (If the batter is too thick, mix in 1-2 tbsp water.)
Place 12 paper patty cases in a muffin tray, half fill with the batter and cook in the oven for about 10-14 mins until springy to the touch. Then cool on a rack.
Beat the icing sugar and remaining butter until smooth. Then add 1 tbsp cold water and mix well.
Divide the icing mixture into a few bowls and mix with various food colourings. Then spread the icing over the cupcakes and set aside briefly to set.
When ready, decorate the cakes as you like and enjoy!
