Preheat oven to 180°C fan forced (200°C normal).
Cream the butter and sugar until well combined in a large bowl.
Add the eggs, lemon juice, pineapple, yoghurt and mint. Mix well using a wooden spoon.
Then add the self-raising flour and gently fold in.
Grease a 12-hole muffin tray and fill each cavity with the dough. Cook in the middle of the oven for about 20-25 mins.
