Microwave Puds

Method:

Spray the inside of 4 ramekins (or straight-sided mugs) with oil and spoon 1 tbsp jam in the base of each one.

Melt butter in the microwave for 1 min.

Transfer melted butter to a larger bowl, together with the sugar and egg. Mix well, using a wooden spoon, and then sift in the flour and baking powder. Stir until well combined.

Then spoon the mixture into the ramekins (or mugs) and microwave on high for 4 mins, uncovered.

Remove and allow to stand for a minute or so. Then run a small knife around the edges and carefully turn out onto a large dish (or individual dishes).

To serve, sprinkle with a little icing sugar and top with a good dollop of whipped cream.
