Preheat oven to 180°C.
Cream the butter and sugar until smooth with a hand beater.
Add an egg yolk and golden syrup and thoroughly mix.
Sift in the flour, bicarb, salt, cinnamon and ground ginger. Mix with a wooden spoon to form a soft dough, adding another egg yolk if needed. Then lightly knead and roll out on a lightly floured workbench to about 3 mm thickness.
Cut large and small rounds in the pastry, cutting the smaller ones in half (for the ears).
Then lightly oil and line a baking tray with baking paper. Place the large rounds on the paper and place the small half circles towards the top to form ears. Press down and then place half a jellybean in the centre of the large circles (as the nose) and two currants on either side (as the eyes).
Cook in the oven for about 14 mins. Allow the biscuits to cool, before finishing off the decorations with the icing, ie. drawing a mouth, eyebrows, etc.
