Preheat the overhead grill to the highest degree.
Cut the toast and ham into the desired shape with a pastry cutter, eg. heart or round.
Then put the cutter on a lightly oiled baking sheet and place the bread and ham inside. Add a layer of grated cheese and carefully remove the cutter. Repeat the process with the remaining ingredients and grill the toast until the cheese is golden brown.
Whisk the eggs and cream with seasonings. Then melt the butter in a non-stick pan and scramble the egg mixture, adding the pesto when nearly ready.
To serve, spoon the ‘green’ eggs on individual plates and top with the cheese and ham toast.
