Preheat oven to 170°C.
Beat 125 gm butter, caster sugar and 1 tspn vanilla essence until light and creamy.
Then add eggs, one at a time, continually mixing.
Sift flour and baking powder into mixture, and carefully fold in with a wooden spoon.
Then add milk and continue mixing.
Place patty cases in each muffin tin and cook in the middle of oven for about 12-16 mins until golden. Then allow to cool on a rack.
Beat remaining butter and vanilla with icing sugar and cream on low speed until smooth. Separate mixture into small bowls and mix in a few drops of the food colourings. Smear on top of cakes and sprinkle with hundred & thousands.
Huey's Cooking Adventures takes a lot of care in the preparation of its recipes, but you are reminded to always double check that the recipe and all the ingredients are suitable.
