Bean Stuffed Tacos

Method:

Preheat oven to 180°C.

Heat oil in a large pan and gently saute celery and onion until softish.

Add tomatoes, sambel, seasonings, stock and bay leaf. Mix well and cook for about 10 mins.

Then turn heat right down, add kidney beans, stir and simmer for about another 5 mins. Taste for seasoning.

At the same time, heat taco shells in the oven for about 5 mins. (They can also be heated in the microwave.)

To serve, stuff the shells with a generous amount of bean mix and top with a dollop of sour cream.
