Sift the flour, baking powder and salt into a large bowl. Make a well in the centre, add the egg and vigorously mix with a wooden spoon.
Then add the buttermilk and whisk in well. Strain the batter if lumpy and then gently mix in the bananas.
Melt a knob of butter in a small non-stick pan and gently cook the pancakes, one at a time, melting a little more butter between each addition.
Serve with maple syrup sprinkled on top.
